La levadura autoctona se encarga de la fermentacion, no a\u00f1adimos levaduras industriales. No controlamos la temperatura y no clarificamos o filtramos el vino.\u00a0<\/p>\n<p>Trabajamos de manera artesanal con un poco de tecnologia, tenemos una bomba manual, usamos la gravedad para los traspasos y el embotellamiento, mantenemos la temperatura de la uva fresca cosechada temprano en la ma\u00f1ana (paramos de vendimiar a las 11 o 12 de la ma\u00f1ana). Trabajamos de manera \u201csuave\u201d y tomamos el tiempo.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>De cada parcela que trabajamos, hacemos un vino, no mezclamos las tipicidades (en general..). Tambien compramos un poco de uva a los amigos de la zona (alrededor de un cuarto o un tercio de la produccion total, dependiendo del a\u00f1o), y con esta uva \u201cjugamos\u201d o experimentamos nuevos vinos.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Y cada a\u00f1o pasa algo, cada a\u00f1o los planes cambian.<\/p>\n<p>Nos gustan los vinos vivos que puedan expresar libremente de donde son.
